As a child birthdays were exciting days. There were seven children in my family so we were celebrating birthdays often. The birthday person could choose his/her own menu, one's favorite meal. Mom would bake the cake. It was a homemade cake, made "from scratch," yellow cake with vanilla icing. The cookbook listed it as a "1-2-3-4 cake." It required sifting the dry ingredients, separating the eggs, beating the egg whites -- a great deal of work, a great deal of love. My mother baked it in two square 8x8x2 pans. Yes, a square cake!
